~て こう meaning? Would it be right to think of this as "do this, like this"?

Yes.  But it might be other meanings too. For example, the こう might be from the verb 行く → 行こう → (行)こう, it's colloquialism, and basically it will be like ~てこう, so, if your sentence is ~て こう, "do this, like this" might be the closest thought.
