You usually use "nicht" if you want to negate a noun with a definite article.
For example: Das Kind spielt nicht mit dem Hund.
If you want to negate a noun with an indefinite article or a zero article you would use "kein".
For example:
Das ist keine Katze.
Ich habe keinen Hunger.
