Why "pas de probleme" and not "pas problem"? Such as you'd say "no problem" (as opposed to "no of problem")... is this the same reason as "combien de boef voulez vous" instead of "combien boef"? Are there any other examples?

Oui. - Yes. You would ask "How much OF THE beef would you want?". In french you always say "de". Like in "beaucoup de...", "pas de...". We may look upon our "pas de probleme"-problem as "nothing OF A problem", which is possible, but not often used in english.
