Just a few suggestions which could help add a wider range of vocabulary: Where you have said: The dishes vary across different regions of the large country. You could say: Dishes vary from region to region. (I personally don't see the need to say "across the large country" it is just extra information that you could take out if you want to be more concise) I recommend not starting a sentence with But in English. You could swap it for However. If you want to advance your vocabulary you could perhaps say: However, one thing for sure is that fish is a staple ingredient in this meal...
