Here "funky" doesn't refer directly to odour; I think it's a reference to "funk" as a genre of music which gave rise to the slang expression "[to] get funky". The meaning of "to get funky" is difficult to define but broadly speaking it's a slang or very informal expression meaning to dance rhythmically and energetically, in a fun or uninhibited way (in other contexts it can have other meanings). He describes the addition of prosecco (which is a sparkling drink) causing movement in the dish ("it froths up") and in saying "it gets funky" he evokes the image of a dancer who is rhythmic, unrestrained and irrepressible, making use of personification. I would say his usage here is pretty idiosyncratic.

Funky means strange ir unusual, when referring to food it usually means a bad or rotten smell.

Hi there, funky smell means the smell's a bit odd, rotten, moldy etc. It's a slang word, so you would only expect to see it in casual situations.
