Can I use “thanks to” instead of “due to”? For example, “Thanks to COVID, many people lost their jobs.”

Yes, you can use "thanks to" in this sentence. Sometimes "thanks to" has an ironic tone and sometimes it doesn't. I recommend checking some example sentences in the dictionary. 🙂

Thanks to COVID, many people lost their jobs. This is correct sentence but it is like a joke. You can use "Thanks to" like this. "Thanks to my job, I can travel to many countries" "Thanks to teacher, I could pass the exam"

Thanks to used for positive outcomes. Due to is used for both positive and negative outcomes. So, no, when you are talking about job losses (which is not a positive outcome), you cannot use thanks to.
