The differences between "Convert to" and "convert into"

"Convert to" can be applied to people: "He was Christian, but he converted to Buddhism." "My office converted to a paperless workflow." "Convert into" is more often used for things that change form: "This suitcase converts into a picnic table." "If you heat some solids, they convert into liquids." "I need to convert Euros into Australian Dollars."
