In the sentence, " I hope you could accept my paper for edition" I'm wondering if I should say "for edition" or " for editing" ?

"editing" is the gerund form which is used as a noun to express the activity. "edition" does not have this meaning but is the final result of editing - a copy of a newspaper or magazine, or a version of a book. Your sentence would sound better like this: "I hope you will be able to accept my paper for editing." "I hope you can" is also OK. I presume you are writing to an editor.
