I think stroke order is important to learn because it is meant to make things easy, logical, uniform, and attractive. My mom is learning Korean too and she asks me this same question. I really do think it helps to learn properly. Once you become more adept at handwriting in Korean, it's okay to deviate somewhat, but I still think that letters will generally be drawn the same way.
For example, in the US, school children learn the proper stroke order for the Latin alphabet. Since we are just learning, it makes things easier. As we get older, we may deviate from this. However, I still think that most people write letters in a few common ways. If you try to make it easier by doing it some other way, it may actually make it harder and more difficult to recognize. The shape is important.
So I will repeat, /learn/ the proper stroke order and /practice/ it. Once you become /more confident/, I think it's safe to /deviate/ a bit. But please make sure it still looks proper^^

We learn the official or proper way. It does not mean we MUST write exactly that way forever. But even when we write differently, all of us write letters similarly.
