A stroke is a relaxing movement of something against your body. A stroke gives you pleasure. - Stroking your hair with a brush is relaxing and feels good. - A lover can stroke your face, hair, leg, or back with his hand or fingers. Different strokes for different folks means that different people are pleased by different things. Some people are pleased by hurting others, some by helping others. Some like pain; some like pleasure. It basically just means that "everyone is different from each other."

This proverb means that different people like different things, or different people prefer different ways of doing things. I am unclear as to the exact origin of the phrase, but I would guess that the word "Strokes" in this proverb would relate to painting. Different people would prefer different brush STROKES when painting.

I don't think anyone really knows the origin of that expression. It means that different people have different ways of doing things and different preferences. Another similar expression in English is "to each their own". They both just mean that other people might like to do things differently, and that it is OK.
