A few days ago, Haruchan made a wonderful gourmet frittata for me, which is a thick Italian omelet that is made from several ingredients. Then, my fluffy Italian fairy friend suggested to me to make a simple onion frittata, which must be one of the more common Italian home cooked dishes. So here I cracked two eggs, sliced an onion and a red chili. It was so simple to make yet so satisfying to eat! The sweetness of the sautéed onions, the spicy kick of the red chili, and the savory Parmigiano were all harmoniously folded into the delicately fried frittata. I plated and garnished my masterpiece with a scoop of cream cheese substituted for ricotta cheese. Buon appetito!!
