It was sunny today. Back home, Mom bought a lively bunch of mantis shrimps for our dinner. Sautéed mantis shrimp is a quintessential local delicacy. We prefer them fresh and lively; purchasing dead or frozen ones is simply not an option. They arrived in a sealed plastic bag, inflated with air and water, creating a makeshift, portable aquarium. To be honest, peeling these shrimps can be a bit of a chore, but the reward is well worth the effort. I’m already looking forward to going with another recipe, perhaps trying a spicier version next time.
