Claudia, so do you is not something you should say. It is wrong. You only use it in this example: I have five apples, so do you. (implying that you have the same amount of apples).
Do not say, 'Have good luck.' Only say, 'Good luck'.

It would be fine to say, "You too!" Or you could say, "Good luck to you, too!" "So do you" would not make sense to a native English speaker.

When someone says a phrase that ends in "do you," you are asking them a question. When you say "to you," you are giving them something, and in your example it is luck. You are giving luck to them, not asking them if they have luck. :)
