All three are fine, but a better writing style leaves out redundant/unnecessary words. That’s why your sentence 2 is better than 1. It says the same thing only with fewer words. And 3 is fine. It’s short and to the point.

They are correct! Just put periods at the end, and another sentence you could say is "You either have money or you don't."
