Both are correct.
Be like = Be as.. as.., they are two words which are thesaurus. 他们属于同义词。

Both are correct, they are just two different ways of saying the same thing.

Both sentences are COMPARING his face to the colour of an apple. They are saying his face was red because he was embarrassed or perhaps he was in the sun for too long.
