When someone says, "Don't tempt me" it means that it is something that they want to do but cannot/should not. A: "Would you like to eat the rest of the chips?" B: "Don't tempt me." Person B wants to eat the chips but knows that they shouldn't because chips are unhealthy. So, really it is a way of saying: "Yes, but I shouldn't".
