Do you think people sometimes use “deaf” this way? I thought a person could either be deaf or not deaf. Maybe in reality there are several degrees of deafness?

Yes, you can be a "little bit" deaf, or "hard of hearing". Deafness comes in degrees or percentages of hearing loss. Total deafness is what you are thinking.

Yeah, in English we usually say "how are you?" or "how do you feel?". When talking about thoughts, it isn't "how are you thinking?", because this has a different meaning. We say "what are you thinking?" or "what do you think?" :)
