I agree that we should have respect for everyone who is doing his or her job properly. But it is true that some occupations put more responsibility onto the workers. I admire all kinds of doctors, nurses, because they cannot make mistakes and have a bad days. They always have to have their best days. And these conscious that someone's life is in your hand in could not paralize them but mobilise to make everything as best as it could be done.

However, if I should point out one, it would be those professions which are related to [the health] HEALTH CARE / THE FIELD OF HEALTH CARE such as doctors and nurses, as health is the most important thing we have in life.
If we don't have GOOD/OUR health we have nothing.
Professions related to education are also needed, they prepare the future generations to be good professionals in the field OF their [choose] CHOICE.
Although new techonologies are fundamental in our lives, I tend to value more the professions that are related [with] TO attending TO people's needs.

As someone who works in THE Science and Engineering field, I really respect someone from A creative field, especially musicians.

In my opinion, what ('whatever' is better than 'what') occupation a person is engageD in is not the point NOR whether IT IS worth my respect or not.
So to speak, I respect a person who can inspire others and add value to the people he [served] SERVES.
Even [that is] IF IT IS a very regular or humble work, it can be a very respectable moment while he is doing something valuable. [On the contrary] ALTERNATIVELY/ON THE OTHER HAND, [a] respectable work can be downgraded by A few people who might do that work in a perverse way.

Ben... your suggestion to start a discussion on the subject of the most hated professions/occupations would no doubt garner a lot of responses, but you are right to think that the discussion may turn nasty. Please know that are are many people who appreciate and respect those in the dental profession who have studied hard and provided great relief from pain and suffering. I even told my dentist that I was glad to have him as my dentist.

Before retiring I was practicing as a dental surgeon. Occasionally I thought dentists were the most hated people on earth (maybe a status they would happily share with the taxman..hehe) .

It would be interesting to formulate the question as follows: which profession (occupation) do you despise or hate the most and why?  Or would that be incitement to negativity?

Surely, Richard, I cannot agree with you more

In modern society, only too many people focus on the most fancy, advanced and profitable technology rather than on food we need every day. More and more farm lands have been converted to build houses to make profit, as a consequence, less and less lands would be available for agriculture or pastoral farming. It is arguable that the upcoming food shortage is a big threat to the future century.  Even the first strike must hit the underdevloped and developing countries, all people on earth have to be accountable for the scenario.

Good luck to Earthers
