I wouldn't use took in this context. To take a ride implies that you're going somewhere - travelling from one place to another.

If you want to say ‘take’ you need to say ‘We took a turn on the roller coaster. ‘ not ‘We took the roller coaster.’ Also good: We rode the roller coaster. It’s concise but sounds a tad redundant to say ‘We rode many rides.’ Use ‘went on’ instead

They are both fine. You can also always use "did". The fact that you refer to them as "rides" proves that "took" is an excellent choice. The words "take" and "ride" are very closely associated in the English language: you TAKE a RIDE. A ride is always something that can be taken. There might be some things at the amusement parks that are not rides, so you cannot "take" them. However, since you used the word "rides" in your sentence, you don't have to worry about that.
