Can I use these interchangeably? You'll ruin your vision. You'll ruin your eyesight. You'll ruin your eyes.

It all depends on the context! You can use words like vision or eyesight in a more serious or professional conversation, for instance with your doctor or optometrist. This can be construed as medical advice. The word eyes however would be more fitting for a casual conversation and may mean a friend or family member scolding you a bit cause they may be worried. Hope this helps!

Yes. They'd be understood to have the same meaning. The only thing I'd add is that 'vision' has more than one meaning. It is the sense of sight, but it also means an imagination or plan of how things should go in the future - a good leader needs a clear vision. So the first sentence could be referring to ruining that.
