I haven't tried this, but in theory, if you open Language Preferences, you can set up as many "languages" as you like. Each of these "languages" that you define will become an option in the bottom right menu, which you can switch between using Windows-Space shortcut. But you can edit and redefine each of the "languages" options. I'm thinking maybe you can add Chinese twice, so that you have three or more "languages" in total, e.g. : English, Chinese and another Chinese, where the second Chinese option you change the options, so that it has the different settings applied. That way you can switch between each of the "languages", each with it's own different options applied, quickly and easily. Does that kind of make sense?
