Which is better? I have a sharp eye toward details. I have an eye for detail. Which is correct? I need an expression that can be used to describe someone who is good at noticing. Are there any other expressions? Thank you!

Having an eye for something means that you either notice it more or (in your case) have some expertise or talent in evaluating it. He had an eye for good painting. This is the meaning that you want, I believe. Having an eye towards something means that you have a definite intention regarding it. He started the business with an eye towards expanding it to the West coast. This is not your example above.

You can have a keen eye towards something, but not a sharp eye.
