”过“ means mistake and make it worse ,so "过多“ is negative. 吃肉过多给身体带来的危害 “太" just a meaning as too much but not that worse. 我吃太多了, 我吃不下了.and we don't say 我吃过多了.

In my opinion, 过多 means a little more, 太多 means too much.

I think “过多” always be used in formal spaking circumstance, like television news, documentary films. the word can also be used in formal writing. While "太多” is more often used in oral spaking, and sometimes it may also contain some complaining emotion in it. For example, you put too much salt into the soup, it is very salty! ( 你在汤里放了太多盐了, 太咸了!) If you want to express in a formal way , you can use “过多”(你在汤里放了过多的盐,所以它很咸。)Just a narration without surprising of complaning emotion at all.

过多通常指代做某事过度过量,比如抽烟过多,饮酒过多。 太多也可指过度过量,但也被用做形容词,比如太多书要读。

I would say, they r essentially the same.过多,e.g. 吃肉过多给身体带来的危害,eating too much meat will bring us more harm to our physical health. 太多, e.g. 你不用担心太多, u dont need to worry too much. Hopefully, it helps.
