Nicked and pinched are both informal/slang ways of saying stolen. Also to nick means 'to make a small cut' and to pinch means 'to grab and pull the skin, normally between two fingers. But as you are asking about them together I suspect the answer you need is the informal one about stealing.

I've just thought of another slang use for both words 'to be arrested by the police.' The nick is a slang word for the police station, so to be nicked means to be arrested and taken to the police station. Pinched can also mean the same thing, but is old fashioned and rarely used today. I think that this use might just be British English.
