What's the difference between "will" and "willingness"? Which one is better for the following sentences? My wife doesn't cook dinner every night, so we usually order food from an app, but sometimes we have dinner with the family. It all depends on my wife's willingness and patience. It all depends on my wife's will and patience.

I would say "willingness" is better for this sentence. "Willingness" means whether or not a person agrees or volunteers to do something. "Will" (in this context) could be a synonym for "determination." So the second sentence would mean about the same thing as, "It all depends on my wife's determination and patience." I think the first one makes more sense.
