You can’t tell the exact meaning without more context. The ‘a-thon’ suffix can refer to an organized fund-raising event, such as a walk-a-thon or dance-a-thon. ‘Bake-a-thons’ aren’t known for that so it must most likely just refers to an especially long session of baking. But I wouldn’t recommend using it for that. It sounds like an unsuccessful attempt to be cute.

It takes the word 'marathon' and changes it to suggest lots and lots of baking. Not a real word, but yes, fun. Sing-athon, dance-athon, bake-athon. Often events like this are organised for charity.
