Chinese food (Shuo Zhu Huo Yu 水煮活鱼) The Chinese cuisine has become world-renown, loved by people in all countries and all walks of life. Chinese food offers dishes that are known to be some of the tastiest and the most unique in the world. Essentially, the colour, aroma and flavour are not the only the key elements in chinese cooking, however nutrition is also a priority. I still remember a very famous proverb from the spring and autumn periods------the path to your friend's heart and soul begins from your cooking. So let me introduce you to some Chinese home-style cooking(Sichuan cuisine), including Shuo Zhu Huo Yu(水煮活鱼), Hui Guo Rou(回锅肉), Ma Po Dou Fu(麻婆豆腐,) Shuo Zhu Huo Rou(水煮活肉) etc. Perhaps you have eaten some Chinese food or even heard of some methods to make/prepare them, but honestly, when compared with popular western dishes, most Chinese dishes do not require complex processing or special equipment in the kitchen. The methods mainly include stewing, red-cooking (my favorite one), roasting, boiling, shallow/deep frying. The following dish I will introduce to you is Shui Zhu Huo Yu(水煮活鱼). To begin with we need to prepare these ingredients: On one hand, salt, cooking wine, starch, a pot of boiling water, hot pepper, bean sauce. On the other hand, we also need ginger, sliced garlic, and dried chilli (smaller). Well, there are four steps to make this dish. Step one, we need to clean up the fish and cut it lengthwise from its head to the tail, the next is to cut into sections. Step two, we will need to add salt, starch and cooking wine. Step three, we need to fry the fish pieces with cooking wine for 3 minutes, which can then reduce the fishy smell/taste. At the same time, we fry pepper slowly about 2 minutes. Then add the dry hot pepper and bean sauce, and stir-fry until fragrant. After 5 minutes, please place the garlic and ginger into the pot. For step four(Finally), we pour the fish meat sections into the boiling water for 3-5 minutes, but you should watch the time, or the fish meat will be too tender or too overcooked. You're probably gonna ask me what's the next step you should do, that's a very significant question for you when you are starving.
