日本語の勉強
僕は二年間日本語を勉強している。でも勉強できる時とできない時があった。If there is anything that a native speaker wouldn't say or doesn't make sense, please let me know.

『彩ちゃんと妻が日本語で話して僕は英語で。』is a bit strange (at least I think so). We usually say
『彩ちゃんと妻が日本語で話し、僕は英語で話す。』
or
『彩ちゃんと妻が日本語で、僕は英語で話す。』
If we use the same verb in a sentence, we'll tend to put a verb in an end of a sentence.(Sorry for my strange English)

僕は二年間日本語を勉強している。でも勉強できる時とできない時があった。--> I wrote what I would say in Japanese. Calling your daughter with ちゃん is OK, however, I wouldn't use it when I write something in public.
