Could you please tell me the meaning of those words&phrases? I cannot get well..

1) I ate my dream away
I had this... whole dream life that I envisioned for myself. A real career. I would marry a man like Dad. I would be a mom like Mom. But look at me, Kev. Like, I ate my dream life away.

2)I could do a voice
What's up?
I'm sorry. You know, I'm trying to understand, for my character, you know, um, are-are we suggesting, you know, that the Man-ny thinks a grown man can breastfeed a baby? Are we saying the Man-ny's got brain damage? 'Cause I could do a voice.

3)light-out family
36 years ago you left me at the front door of a fire station. Now, don't worry, I'm not here because I want anything from you. I was raised by two incredible parents, I have a lights out family of my own

The best person to answer these questions for you will probably have to be someone who watches "This is Us" as the comments are a lot of U.S. slang and/or colloquialisms. Otherwise, it will be hard to get the answers you are looking for most likely.

1.  She feels like her weight stops her from having the life (career, husband, family) that she wants.  She is saying she ate food instead of having that "dream life."

2. "do a voice" means that he could talk with a funny sounding voice when he's acting instead of his normal voice to make the character sound like he has brain damage.

3.  That doesn't make sense.  I don't think that's a correct transcription.

4. In this sentence, "prick" is an insult referring to some person.  Usually that person does not do good work and writes poorly.  But, if the person feels like doing good work (when he wants to), he has the ability to do so.

5. This also doesn't make sense.  I do not think the transcription is correct.

Adding to Polo’s answers, which are good ones, here’s an answer for #3:  “Lights out” in the US is a sports metaphor that means a dominating performance.  “The Yankees pitcher has been lights out every time he’s pitched this month.”  I think the idea is that the performance shuts down the other team completely, so there’s nothing left to do but turn off the lights.  Extended here to the family context, it means an absolutely great family.

1) ate my dream away would imply that this character eats a lot and that somehow stopped her from achieving her dream.
2) I could do a voice here seems to refer to putting on a funny tone/lilt, such as you'd do for a baby. "doing a voice" generally means changing it in some way, like for a character or an accent, with the specific connotation of performance.
3) no idea! Sorry!
4) If you replace "the prick" with "he", does that make sense? "The prick" refers to a person, and that person can write when they want to. "Prick" is a common insult in the UK especially and compares the subject to a penis.
5) I don't know what an 'alt pass' is, but 'take a quick whack at' means to attempt something casually to see if it's possible to do. To try - but with a casual attitude.
